While it’s not “real” low n’ slow smoked BBQ, this delish Impossibly Easy Spicy Barbecue Beef Pie is a ridiculously simple kitchen-made dish that will please your family. And if this recipe proves to be a bit too spicy because of its inclusion of medium-heat serrano chiles, you can substitute the milder jalapeno pepper if you’d like. Whatever your or your family’s heat tolerance is, it’s a good bet that there will be little to no leftovers after whipping some of this up for dinner!
1 lb ground beef
3 medium serrano chile peppers, chopped (substitute 2 jalapenos if you desire it to be milder)
1 small bell pepper, chopped (1/2 cup)
1 medium onion, chopped (1/2 cup)
1 1/2 cups shredded Cheddar, Monterey-Jack, or similar cheese (6 oz)
1/3 cup barbecue sauce
1 cup Original Bisquick® mix
1 cup milk
Shortening (enough to grease pan)
2. In a large skillet, cook ground beef, onions, serrano pepeprs, and bell peppers over medium heat. Stir occasionally, until beef is brown. Drain beef of grease.
3. Stir the barbecue sauce in the beef/onion/pepper mixture. Spread in pie plate. Sprinkle with 3/4 cup of the shredded cheese.
4. In medium bowl, stir in Bisquick mix, eggs and milk until blended. Pour over beef mixture.
5. Bake uncovered for 25 minutes. Carefully take pie plate out and sprinkle the pie with remaining 3/4 cup cheese. Return to oven and bake about 5 minutes longer or until knife inserted in center comes out clean. Serve with additional barbecue sauce, sour cream, lettuce & tomatoes, or cole slaw.
