Recipe - Bacon-Wrapped Jalapeno Poppers

Bacon-Wrapped Jalapeno PoppersFor a delicious appetizer or snack, it's hard to beat the wide appeal of bacon-wrapped jalapeno poppers. It's got kick from the jalapenos, crispiness from bacon, and a sweet, creamy, melty fusion of cheddar and cream cheese to balance out the taste.

* 25 fresh jalapeño peppers
* 2 16 ounce packages bacon
* 16 ounces cream cheese
* 1/2 cup shredded cheddar cheese (you can substitute any comparable types of cheese, such as shredded monterey-jack or a "Mexican" blend)

Directions

First, preheat oven to 450°F. Second, using a large spoon, blend the cream cheese and cheddar cheese together in a mixing bowl. Next, wash the jalapeno peppers, split them in half longways, and scoop out the seeds and veins. Then, stuff each pepper half with the cheese mixture using a teaspoon or butter knife (experiment to see what works best for you). Cut bacon in half and wrap 1/2 slice around each pepper half; stick a toothpick through to hold the bacon in place. Place on baking sheets and place in oven for 10 minutes or until bacon is fully cooked.

Alternate Grilling Method:
Lay the peppers on a preheated grill and cook for about 3 minutes on medium heat on one side. Carefully turn the peppers over (you don't want the cheese to ooze out) and grill the other side for another 2-3 minutes till the bacon is crispy and cooked, and the cheese is melted.

Sounds yummy! I had japapeno poppers a few years ago and forgot how much I had enjoyed them. I'll have to try these at my next get together. Thanks for the recipe!

These jalapeno poppers are also great breaded. Try stuffing them with cheese and dipping them in flour & breadcrumbs. Then fry them up until they're golden brown....MMMMM!

If you're really adventurous, try some habaneros instead!

We in the BBQ world call these Atomic Buffalo Turds (ABTs). Best cooked on a smoker, or on a charcoal grill cooked indirectly with some wood chunks to get them smoky. If you cook them indirectly at a lower temp (250-275) there is no need to flip. You can also pre-render the bacon a bit to aid in crisping.

Make a bunch cuz they will go fast!

bmanMA,

Correct. Whatever you want to call them, they are one of the tastiest appetizers around! Thanks for the smoker tips!

I have always made poppers almost this exact way, and always throw them on the grill. I half cook the Bacon first so that I can blackened the peppers on the grill without cooking the bacon too long. They are amazing. Never added cheddar though..

It’s often said that there are two types of food; the food on which you can put cheese and the food on which you can put chocolate. I agree with this. And, I agree wholeheartedly – but only if it includes chiles.

This was my mantra but it's clear I forgot BACON. You've managed three out of four. :D

One thing I've done in the past is to mix an egg in with the cheese. It acts as a binder so when you bite into it the cheese doesn't squirt.

Good stuff.
