Scott's Best Products of 2011

The following are items and companies I've chosen as featuring the best that have been released or that I've encountered for the first time during the 2011 calendar year. To qualify, this product either had to be released after January 1, 2011 or I would have tasted it for the very first time in the past year. Believe me, there were dozens of worthy sauces, seasonings and food enhancers I would have loved to include and so many product manufacturers that deserved a mention. But I had to narrow it down to the creme de la creme and give the "Scottvies" (with apologies to Dave DeWitt) to my top choices in each category.

Please bear with me as I speak with an upper respiratory infection. I hope my scratchy voice isn't too annoying to listen to, especially as it gets later into the video.

I've deviated slightly from the past (but not too much) from the tops in these categories:

Scott Takes 16 Million SHU Pure Capsaicin on Blotter Paper

Johnny McLaughlin of Heartbreaking Dawns Sauces and Seasonings was brainstorming a safe way to experience the taste and heat of pure crystal capsaicin (16 million Scoville Heat Units) in effective quantities. Here is his experiment....Blotter Paper. Johnny ordered up some collectible blotter designs from a source in the UK (Note these are collectibles that are not intended for or have ever been used for anything illegal) and took 30 G of pure crystal and let it break down in 1.5 pints of alcohol. The blotter sheets soaked overnight and layed out on a drying rack. The concept is that the alcohol would evaporate, leaving the crystal imbedded in the 100 per sheet individual hits. So did it work? YES...

Johnny sent the capsaicin-encrusted blotter paper sheets out to several chileheads to try, including myself. I tried a total of 20 squares to see what kind of burn it would put on my tongue. Here are the results, which include some coughing and reflex gagging...

The Missouri Boyz Eat a Black Naga Chile Pepper

Myself and fellow St. Louisan Ryan Graub comprise The Missouri Boyz review team. In this installment, we each eat a whole Black Naga chile pepper, a "chocolate" strain of the King Naga, which is a variety close to the famous Naga/Bhut Jolokia or Ghost Chile Pepper. What are our reactions?

2011 Defcon Deathmatch at the 5th Annual Weekend of Fire

Here's the full video of the 2011 Defcon Deathmatch National Wing-Eating Championship at the 5th Annual Weekend of Fire this past Saturday, October 1, 2011 (the only part that's edited is when the death certificates release forms are handed out). Mark Ennis was this year's winner. 2010 champ Steve "The Machine" Smallwood took second place, while 2009 winner David "Hudd" Huddleston took third.

Official Open Fields 2011 DetailsYup...Open Fields, the chilehead gathering and camping outing, is back! It will officially be held this October 7th - 10th. Below are the details, with both Jim's words and my words mixed.

First off, if you've never attended and wish to, then send Jim and e-mail at jim @ stepupforcharity.org (just remove the spaces) as soon as possible and he will gladly send you an invite with all the confidential info you'll need to find the "secret" location of the central Indiana fields on which this annual event is held. Cinderosa Chili Bonanza

Earlier tonight my favorite Texas-based chili makers, Cindy Reed Wilkins and Bruce Wilkins, e-mailed me a video highlighting their entire top-notch product line. The Cin Chili product presentation has since been uploaded to YouTube for the enjoyment of everyone.

For pre-existing fans of Cin Chili, there's nothing particularly new here. It looks as though it was made as both a commercial for the general populace and as a promotional video for perspective retail outlets not yet selling this line of spicy products. Bruce told me that they're going to put this on a DVD and loop it at food shows and festivals Cin Chili attends.

Mom Who Punished Son with Hot Sauce Goes On Trial

Here's a video update on the Alaskan mother who gave her adopted son hot sauce and a cold shower for acting up.

What was the 7-year-old being punished for? Wriggling in his seat; pencil sword-fighting at school, and then lying about it to his mother.

Do you think trying the woman was a gross over-reaction in a politically-correct society? Is eating hot sauce or taking a cold shower "child abuse"? Or did the mother go way over the line in acceptable punishment for her son's misdeeds?

Robert Rodriguez's 10-Minute Cooking School: Texas BBQ

If you've paid close attention to my blog the past couple of years, you know I'm a fan of filmmaker Robert Rodriguez and his clever 10-Minute Cooking School series that appear in the bonus features of his DVD and Blu-Ray flicks. I loved his recipes covering his delectable Puerco Pibil and spicy Sin City Breakfast Tacos.

This latest installment is from the latest special edition of his Planet Terror release: Texas BBQ. Thank the Lord...Rodriguez doesn't screw it up! Although I disagree with them about a few minor things - his disdain of pork ribs; his way-too-basic beef rub (Nine parts black pepper and one part salt? Is that all?) - but he demonstrates some very accurate rudimentary knowledge of how to smoke low n' slow some brisket and beef ribs. Watch this and you'll see one of the best and all-around coolest writer/directors in the entertainment biz who honestly knows a thing or two about food:

What's the Difference Between BBQ and Grilling?

What's the difference between grilling and barbecuing? Although many novice backyard cooks use the terms interchangeably, they're actually NOT one and the same. This video from Troy Black summarizes it very nicely. The only thing I would add is that BBQing frequently uses wood smoke for flavoring while cooking.

Can You Grow A Willy Shaped Chilli Pepper?

Peter Pepper, AKA Chilly WillyPepper fans and chile pepper enthusiasts all know about the "Peter Pepper". Quite bluntly, the Peter Pepper is an ornamental plant with pods shaped like penises. You can buy Peter Pepper (aka Penis Pepper, or Chilli Willy) seeds and plants (with varying availability) at sites like Refining Fire Chiles, Pepper Joe's, and Cross Country Nurseries, just to name a few online spots.

Earlier this morning I stumbled across this funny little animated video advertising chillywilly.com's namesake chile pepper. It's definitely worth a watch, and there's nothing highly inappropriate about it, so it's probably safe to watch at work. Enjoy!

2011 Peppers at the Beach Bloggers Roundtable

Since a large number of bloggers were to be present at this past weekend's Peppers at the Beach, I asked Brian & Marilyn Meagher of HotSauceDaily.com and HotSauceWeekly.com if they wanted to do another roundtable chat for their podcast.

The chilehead minds gathered in a back room of the hallowed Peppers shop in Rehoboth Beach, Delaware and what was produced was a looser, livelier discussion which included a few controversial topics not covered in the Bloggers Roundtable talk from last year's Weekend of Fire.

In addition to Brian and Marilyn, the bloggers present were Doug Spiros of Peppers and More, John Scrovak from Eat More Heat, product maker John "Huvason" Grabiec of Fat Kid Sauces, Al "Buddah" Goldenberg of I Love It Spicy, and myself.
