Recipe - Cheesy Chicken Potato Bake
Need something to "wow" all your guests the next time company is over? Wanna blow everyone away at your next family or potluck function? Try this fantastic Cheesy Chicken Potato Bake. It's one of my all-time favorite recipes. There's nothing spicy or peppery in it, but once you take one bite of it, you won't care. It's creamy, cheesy, crunchy, heavenly and melt-in-your-mouth delicious.
Ingredients:
2 lb package frozen hash brown potatoes
1/2 Cup melted butter
1 tsp salt
1/2 tsp pepper
1/2 Cup Chopped Onion
1 Can Cream of Chicken Soup (undiluted)
2 Cups of Sour Cream
2 Cups (10 oz) Shredded Cheddar Cheese
1 Cup Crushed Cornflake Crumbs
1/4 Cup Melted Butter (to mix in with crumbs)
1 tsp of Butter (to cook with Chicken)
2 Chicken Breast Fillets
Directions:
Defrost potatoes. Cut up chicken breasts into 1-inch cubes and cook with butter for approximately 3 minutes in a skillet over medium heat. The outsides of the chicken pieces should be white, insides may be still pink (chicken will finish cooking with other ingredients later). Combine chicken with potatoes in a large bowl with 1/2 cup of butter. Season with salt and pepper. Add onion, soup, sour cream and cheese. Blend ingredients thoroughly. Pour into buttered (3-quart) casserole pan. In a small bowl, mix 1/4 cup butter with cornflake crumbs. Cover potato mixture with crumb/butter mixture. Bake at 350° for 1 hour. Serves 8-10 people. Can be made ahead of time and baked when ready.
Operation Peppers and More
From Doug at PeppersandMore.com directed towards all spicy food fans and manufacturers:
"My Fellow Americans.....
I would like to take this time to share with you a mission I have been on for the last several months. If you are like me, you sometimes take for granted the simple every day things we experience on a daily basis in our crazy, hectic lives. I think, a lot, about the soldiers, the men and women who everyday sacrifice their lives for us, trying to maintain the freedom which so many of us forget that we own. I have read many of their wish lists, and letters of things they miss most, and they all have in common one major thing. FOOD!!! So who better to reach out to, then my fellow foodies, chili heads and friends.
We are seeking donations of ANY type of non perishable food items in which you may manufacture. Hot sauce, relish, mustards, candy, jerky, etc...
Our first package will be going to : Spec. Mohan Timothy, Camp Bucca, Iraq
If your interested in becoming a part of Operation Peppers N' More please contact Doug at Doug@peppersandmore.com for more information."
Domino's Pizza in Taiwan Introduces New Pizza Made with Hottest Chile Pepper
Targeted at adventurous consumers in Taiwan, Domino's Pizza introduces a new flavor made with the spiciest chile pepper in the world. You can now order a large one for NT$299.
The Bhut Jolokia, or ghost chile, is from Assam in India. It rates one million in the Scoville scale, a measure of the hotness defined by the amount of capsaicin present. The newly-developed flavor mixes five percent of the ghost chile with curry sauce to create different levels of taste, in the aim to impress heat-loving consumers.
A promotional campaign to coincide with the blazin' pizza will launch on May 29th,particularly for females. If they snap a photo of their "pouty and full lips" after eating the pizza, they can then upload it on the Domino's Taiwan website to compete with other participants to win a chance to enjoy free Domino's Pizza every day for a year, or 365 take-out coupons.

Review - Tostitos Sweet and Spicy Summer Salsa
Most folks in America are probably introduced to salsa by consuming one of the national, store-bought brands, a la Tostitos or Pace, but don't usually go much beyond that. With the universe of diverse flavors offered by other salsa manufacturers just begging to be discovered, it's refreshing to see the big guys release something other than the same-old same-old. Tostitos has concocted a Sweet & Spicy Summer Salsa which I hope is one of the first steps in opening up new tastes for fans of regular salsa...

Hoagies' Heroes
Tomas Arana and Eric Richter bring the tastes of Buffalo's sandwiches and wings to Moiliili
Courtesy of the Honolulu Star Bulletin. Written by Jason Genegabus.
Honolulu residents no longer have to hop on an airplane to get an authentic taste of the East Coast, thanks to the efforts of restaurateurs Tomas Arana and Eric Richter.
When the pair opened Buffalo Boys Hoagies on April 3, they realized a dream of working together -- and for themselves -- to bring the foods of their hometown to a new audience on Oahu while also providing a taste of home for expats now living on the island.
"We get visitors from Buffalo (N.Y.) every day," Richter said last week during an interview at the restaurant. "I know the population dropped by 50 percent there, but I didn't know they all moved out here to Hawaii!"
The menu is relatively straightforward at Buffalo Boys -- steak hoagies, chicken fingers and Buffalo wings dominate, although more health-conscious types can opt to order one of three salads available. Hoagies are made with 100 percent top sirloin steak, finely chopped into "nickel-sized pieces" and served on freshly baked bread from Ba-Le...

Hot Sauce and Hot Pepper Sites You Should Not Miss
Like any of ten thousand different topics, the subject of spicy foods - more specifically, hot sauces and hot chile peppers - has its dizzying share of destinations of the web. Just to name a few, you'll find online stores, sauce manufacturers, general foodie sites, and recipe hubs all vying for your attention. But where should you go to slice through all the clutter and find good, undiluted coverage of all things mouth-burnin'?
Here are some of the places I visit on an almost daily basis to stay up to speed. These spicy foods sites are run by genuine, down-to-earth people just like you and me. You won't find boring coverage of dainty French pastries or hoity-doity Japanese cuisine you'd never eat in a million years. These guys love grillin' and chowing down on real food, giving hot sauce reviews, and talking about their experiences in the average joe's culinary world...

The Happiest Peppers in the World

Video Section Added
The ultimate time-waster - watching online videos - has been made easier here on the ScottRobertsWeb.com site with a new videos section. Okay, tagging a blog post as a "video" may be one of the most lackluster things to rave about, especially when it's a snap to do it with today's blogging software such as WordPress. But stubborn little ol' me doesn't use any pre-packaged blog software; everything is hand-coded, so I have to put in a bit of time and effort to add the simplest of features.;-)
Anyway, I digress. Now you can view a multitude of videos deemed entertaining or enlightening by me - hot sauce and hot pepper eating clips, music-oriented videos, or funny crap and more.
Enjoy: Videos.
Chile Pepper Institute Now Has Super-Hot Bhut Jolokia Sauce
Fiery-Foods.com reports that the University of New Mexico's Chile Pepper Institute has developed and is now selling a new super-hot Bhut Jolokia-based sauce called Holy Jolokia. The sauce comes in a 5 oz. bottle and goes for $5.00 $10.00. Most importantly, a portion of the profits will help fund research and education at Chile Pepper Institute.
Unfortunately, even though it's 2009, the CPI has not discovered online commerce. So if you're interested in ordering a bottle of Holy Jolokia sauce, you must send the CPI an e-mail at hotchile@nmsu.edu.

Review - Cajun Heat Liquid Napalm Hot Sauce and Voodoo Ash Seasoning
I'm doubling up for a pair of Cajun Heat brand products - Liquid Napalm hot sauce and Voodoo Ash seasoning. They're damned good and have the Scovie Awards to prove it - Liquid Napalm sauce won 1st place in the 2009 Scovie Awards for "Hot Sauce - Unique" and 2nd place the "Hot Sauce - Louisiana-Style" category. Voodoo Ash was a 1st place recipient in the "Cook-it-up Meat Required - Dry Seasoning" category. Fairly good for the first year of being in production, eh?
