Wing Sauce Throwdown
It's time for a throwdown, and it appears neither side is chicken! If you're new to this site and not sure of exactly what is going on here, check out this post for all the details and read all the comments. That will explain everything.
We are putting up a big boy, Defcon Sauces, against the new kid on the block, Rippin' Red Sauces.
Here is how it will work: John Z. and Rick B. of Peppers and More will have a little army of people who will be blind judges. They will have a list of four criteria that they will be using to judge. Not a single person judging these sauces has ever had either of the two sauces in the contest. The judges will rate the food with a 1 to 5 number system, with 5 being the best:
1. How well does sauce cling/stick to wings? 1-2-3-4-5
2. Aroma? 1-2-3-4-5
3. Color of sauce? 1-2-3-4-5
4. Overall taste? 1-2-3-4-5
In order to be totally fair and unbiased, they will not be passing around any of the sauces for smelling or tasting prior to passing out the sauce-covered wings. This way they only taste it and see it on the wings. They will be cleansing their palate between wings and sauce with water and lime juice. They will be using fresh limes and water, no salt nor sugar nor anything added so that does not effect the flavor of the sauce.
They will start with the mildest of the sauces (Defcon Defense Condition #3 and Rippin' Red Original wing sauces). This way the judges' mouths won't immediately get too hot and ruin the flavor of the mild. All wings will be fried in the same oil so they are the same across the board. Both sauce-makers have been spoken to and have been given a rundown of what will be happening, and they were happy with how this will be handled. Therefore, everyone knows what is going on.
We are going with ten people per tasting team, which each team run by John Z. and Rick B at separate locales. This whole event will be shot on video and put up online. We will announce the highest scoring for each sauce on the video, but we will hold all scorecards and come back and do a new post with a break down of each score and what each sauce scored. We also will be writing down thoughts like: "Does the sauce need work?" and "If so, what?" We will share whatever people say, and let the sauce-makers decide what they want to do with that information.

As someone who's had both sauces, I thought these were the best heat match ups for groups of people who aren't necessarily chileheads.
