Review - Mossy Bayou Foods Who Dat? Hot Sauce and Bayou Blend Seasoning

Here are a couple of new products in the stable from Mossy Bayou Foods - the bright, pea-green Who Dat? Hot Sauce and the Bayou Blend Seasoning. Are either worthy of your culinary attention? Read on to find out...

Who Dat? Hot Sauce

Ingredients:
Reads: "GOLDEN PEPPER SAUCE Pepper, Vinegar and Salt"

Aroma:
2.5 out of 5. Just like tart, vinegary pickles, with a splash of peppers thrown in.

Who Dat? Hot Sauce

Appearance and Texture:
3 out of 5. Pure, almost nuclear light green. Possesses the consistency of a thin, sparse Louisiana-style chile sauce. Hardly any dark specks or visible ingredients, save for the green-colored pepper fragments themselves.

Taste Straight Up:
2.5 out of 5. Nothing thrilling in the flavor department, but it's not bad either. As expected, the high vinegar content makes it strong and puckery and has a decent balance with the taste of the chiles. Not too salty, which in this case was an asset.

Taste on Food:
2.5 out of 5. I gave Who Dat? Hot Sauce test runs with a variety of food subjects. First, it was fried chicken. Who Dat? lacked a "heaviness" that was needed to complement the meat and the taste of the breading. Eggs? Not bad, but it's certainly no substitute for your favorite morning hot sauce. Beef and bean tacos? I have to say it was pretty good in combination with the other flavors. A ham and provolone cheese sandwich? Odd, but it worked. I could also see this blending admirably with chilis, gumbos, jambalaya, and even saucy sides such as potato salad and mac & cheese.

Bottom line, if you employ Who Dat? as an additive, the sauce is okay enough for some light uses, just as long as it doesn't have to shoulder the majority of the taste duties. Otherwise, there are numerous other products that can perform a much slicker job.

Heat:
Medium-hot, and on a scale of 1 to 5, this is smack dab in the middle with a 2.5. Who Dat? Hot Sauce would be suitable for consumers comfortable with the Tabascos and the Frank's Red Hots and are searching for something just a tad hotter.

Label:
1 out of 5. Sorry, but this is one of the most unprofessional-looking labels I've seen in many a year. It's covered in 1980s-quality computer graphics. Maybe Mossy Bayou's thrust was to push this as an experimental sauce, and coupled the label to match that intent. I don't know, but I probably wouldn't buy this at a brick-and-mortar store if it were up to the packaging.

Overall:
This sauce might find an audience, but with so much good competition out there it will be a difficult task. Personally, I'll stuck with my favorites.

The next product from Mossy Bayou, is a dynamic yet no-frills seasoning called Bayou Blend. Its ingredients rundown is small (see above) but they manage to pack a lot of cajun personality inside the 2 ounce plastic bottle. Bayou Blend is both salt-free and MSG-free.

I sprinkled generous amounts on a ground beef patty; I normally don't like my burgers over-salty or over-seasoned, but to me a mark of a great rub or spice blend is it's ability to accent (no pun intended) meat and make it transcend it's pure, "base" taste to something new and unique. After grilling both sides of this puppy, I had a nicely-seasoned hunk of meat - just a bit spicy but nothing overpowering. Bottom-line is was damn tasty and made me crave another one.

I can imagine this would be great on anything you would normally apply seasoned salt to, or that needs a boost of southern flavor - salmon, shrimp, rubs, or chops. This would probably be terrific with barbecue sauce, too.

In conclusion - Mossy Bayou makes some great products, such as the scrumptious Original Cajun Chow Chow Relish I've previously reviewed and the Bayou Blend covered in this article. I feel when it comes to hot sauces, they need to do a bit of tweaking with their Swamp Scum Hot Sauce and Who Dat? Hot Sauce before they can claim to have have truly exceptional products across the board.
