Review Bites - Four Hot Sauce Mini Reviews

This time out in Review Bites I've got four hot sauces that all vary widely in their style and flavor tones: Uncle Brutha's Allsauce No. 10 Hot Sauce, a rich, complex food enhancer strong in the umami department; Blackstones Dragonshead Pub Style Fire Roasted Hot Sauce, an offering with a bold tomato/olive edge; Dragonfire Naga's Revenge Hot Sauce, a super-hot scorcher; and Bello Hot Pepper Sauce, a powerfully all-purpose table mate. After putting these through their paces, what exactly do I think of them? Read on to find out...

Uncle Brutha's Allsauce No. 10 Four Chiles & Garlic Hot Sauce

Like it's brutha in the Uncle's lineup, Uncle Bruthas ALLSAUCE No. 9, Allsauce No. 10 Four Chiles & Garlic Hot Sauce stands tall with an amiable richness and complexity. Uncle Brutha himself, Brennon Proctor, is one of the few hot chile pepper sauce makers who employ elements like vegetable juices and soy protein, giving his creations remarkable depth. A lick of No. 10 reveals a spicy, garlicky kick with strong, savory hints of beef summer sausage, celery salt and chicken broth. The strange thing about this thick sauce is that whatever peppers are present completely fade back into the background and making it dang near to pick out them out individually, yet melding beautifully with the other ingredients.

This is a delicious sauce that would go well as any non-sweet application - wings, Mexican, grilled white meats, fried potatoes and chili, just to name a few.

Blackstones is another new sauce maker who is eagerly testing the waters with a slew of fiery condiments. Their Dragonshead Pub Style Fire Roasted Hot Sauce is the name of my review subject this time out. When it comes to heat, this good looking, red-colored, medium-consistency liquid doesn't disappoint with habanero-level flare.

Yet, and perhaps more importantly, it really fails in terms of overall flavor. Sure, it's different than your average hot sauce; and it boasts a lively tomato-led richness, yet it's the olive taste that's way too dominant to me. It's not simply a subtle background supporting flavor...the nagging olive tones take center stage and wollop you over the tongue with no mercy.

I've never been crazy about the distinctive, dark flavor of green olives, and I really dislike how olive oil tastes. So much, in fact, that I'll often replace another type of oil for E.V.O.O. when a recipe calls for it. If you like E.V.O.O., then you may think Dragonshead compliments Italian foods when you're hankering for a bit o' heat on food from the boot. But if you're put off by olive oil the way I am, then don't waste your time with this.

Dragonfire Hot Sauce Naga's Revenge

Dragonfire Hot Sauce Naga's RevengeIngredients: Trinidad scorpion, bhut jolokia, bell pepper, thai chile, onion, vinegar, molasses, ketchup, lime juice, blue agave, honey, spices and natural flavors.

When you feature two of the hottest chile peppers on this little blue orb we call home, you know is gonna be in an incendiary category that ain't exactly littered with the likes of Tabasco and Texas Pete. Naga's Revenge is a deep red, thick and clumpy elixir that's the real deal heat-wise. Flavor-wise, it's fantastic at retaining the flavors of a couple of the hottest varieties of the capsicum chinense pepper species - both the bouquet-like notes of the Trinidad Scorpion and the fruity, citrus/apricot-like hintings of the Bhut Jolokia. And fear onot - Owner Rick Villafrade did a bang-up job making this more than just taste like pepper puree. It really is a good, three-dimensional yet natural-tasting sauce.

Because of the extreme heat, it's good advice for all but the most hardcore chileheads to use a drop or two at a time. Those who can't take the heat and pain, stay out of this Dragonfire's kitchen.

Bello Brand Classic Red Hot Pepper Sauce

Bello Brand Classic Red Hot Pepper SauceIngredients: Scotch bonnet peppers, papaya, onion, vinegar, salt, spices

Hailing from the the small island nation of Dominica (not to be confused with the Dominican Republic), Bello Hot Pepper Sauce is a Scotch Bonnet Pepper condiment boasting "choice Caribbean seasonings". I happen to think it resembles less your stereotypical fruity, tropical hot sauces and more like a Mexican sauce like Cholula or Tapatio, both in terms of texture and flavor. It's got a sharp bite from vinegar and loads of heat from the chiles with only the tiniest tinge of fruitiness to give it complexity.

Since it's so similar to a south of the border fluid, it's nearly perfect on Mexican cuisine, as well as anything you would normally splash a Louisiana-style cayenne pepper sauce on - eggs, pizza, bloody marys, and so on. It's not gonna win any accolades from me for being original, but it's utilitarian nature would make Bello an excellent go-to table sauce.

Have to disagree with the Blackstones hot sauce. I thought it was really really tasty! Smooth flavor, sharp heat and great finish! Yummm!
