Buffalo Chicken Twister Wraps

One of our most looked forward to meals around Casa Del Roberts would have to be Buffalo Chicken Twister Wraps. These were inspired by restaurants such as KFC which offered fried chicken pieces in a Mexican-style flour tortilla. Well, what we did here at home was to make it more closely resemble another staple - boneless buffalo wings - by adding some mild, medium or screaming hot buffalo wing sauce. The following recipe is moderately simple yet once you try them, these spicy Buffalo Chicken Twister Wraps might turn into one of your favorite foods as well.

Ingredients:
4 Boneless, Skinless Chicken Breasts, Cut Into Strips
3 Large Eggs
1 Whole Tomato, Cubed
1 Cup of Lettuce, Shredded
1 Cup of Cheddar or Monterey Jack Cheese
Buffalo Wing Sauce (Defcon Sauces or Ott's Wing Sauce are recommended)
Ranch Dressing to Taste
Vegetable Oil as needed from frying
8 Flour Tortillas

Breading:
2 cups flour
1/2 teaspoon salt
1 1/2 teaspoons black pepper
1 teaspoon garlic powder
1/2 teaspoon paprika
1/2 teaspoon cayenne pepper

Directions:
1. Preheat vegetable oil in a deep fryer to 375 degrees.
2. Combine all the breading ingredients in a large bowl.
3. Whisk eggs in a small bowl.
4. Dip chicken breast strips into the egg mixture, then dip into and evenly cover with the breading blend.
5. Carefully drop each piece into the heated oil and fry for 6-8 minutes or until each breaded piece is golden brown.
6. When chicken pieces are done frying, remove them to a plate lined with a couple paper towels.
7. Take flour tortillas and heat them in a microwave for ten second increments until all are evenly warm (but not hot).
8. Place one tortilla on a plate and put two or three fried chicken pieces on it. Top with desired amounts of shredded cheese, lettuce, tomatoes, buffalo sauce and ranch dressing.
9. Wrap up tortilla and enjoy!
