Chilehead is Making His Dreams Come True - Jay Calvert of Jake Albert's Specialty Foods
Jay Calvert of London, Ontario is finally making his dream come true. He has entered the Hot and Spicy foods market with his first offering - Jake Albert's Fuego Rojo, a pomegranate habanero glaze.
As a boy, Jay was fascinated with cooking. He dabbled with making his own barbeque sauce at 7, only flavored ketchup, but to him, it was his creation.
What Jay has developed is a truly unique specialty hot sauce. A blend of sweet pomegranate and the finishing of the mighty, fiery habanero pepper. The creation is called Fuego Rojo, Spanish for "Red Fire".
"Spicy foods puts a lot of people off as the commercially available products tend to focus more on the heat than the flavor, typically this is a no go for most who don't even want to venture because of previous experiences with the really spicy foods. What I have done is made the flavour come through first, then you get the heat which is not overwhelming." Now he has started his own local spicy foods company, Jake Albert's Specialty Foods.

Jake Albert's Specialty Foods was formed in 2009 after 2 years of constant encouragement by his wife, friends and co-workers. The company name is a play on words on Jay's name. Whenever people hear 'Jay Calvert' they hear it as 'Jake Albert' so Jay chose this moniker to represent his company.
Jake Albert's specializes in gourmet spicy food products. While there is a line of spice quality spice rubs and more sauces in the works, Jake Albert's is not just another hot sauce manufacturer it is a 'Where Fire meets Flair' establishment.
